Caramelized Crusted Pesto Shrimp

Happy Wednesday, as my sisters boyfriend always says. Here is a little food for thought for today Genesis 9:3 says "Everything that lives and moves about will be food for you. Just as I gave you the green plants, I now give you everything."  What we put in our bodies is definitely a reflection of ourselves, just like music or people that we hang around. Check yourself spiritually and physically to see if you are pleasing God or mankind today. Well, on humid days like today I wanted make something that was refreshing to taste but also savory to the season. I made shrimp and  Microgreen sunflower & opal basil blend for my salad and  for the dressing I used olive oil a little lemon juice and honey. Along side with my favorite carbohydrate in the UNIVERSE a jewel sweet potato dashed with cinnamon and drizzled with honey or agave (even though I can eat them plain). 
  


The best part of this meal is that I know that all my food is locally caught as well as grown.

National Coffee Day

It's my favorite day of the year, I absolutely love coffee. Today is national Coffee day and they are giving away free coffee in different places. Today, I went to my favorite little quaint spot to study and have coffee which is Urban Farmhouse in Midlothian, VA. Normally when I go I get the Cafe Latte with coffee toffee syrup sweetened with  my favorite milk unsweetened vanilla Almond Breeze.
 Also I added a cinnamon bun for my sweet tooth even though I didn't need it!
Urban Farmhouse is a wonderful place for small meetings, studying or just hanging out.

Friday Fun

So, this is my official first blog! I am so excited about this fun foodie journey I am taking. Tonight, I indulged in one of my favorite restaurants,  Casa Del Barco. My appetizer, bacon-tamato guacamole with pico de gallo along with warm tortilla chips. The main entree was a casa specialty chicken enchiladas stuffed with roasted chicken sweet peppers and onions, queso chihuahua, tomatillo salsa verde and lime creama. The food was wonderful, and Mexican is my favorite type of food.

Also, the night didn't have to stop there. Also one of my favorite dessert places in Richmond Shyndigz. My best friend and I got the Apple Crisp a la mode and Cobbler de jour which the specialty is peach for the night and a cup of Shyndigz decaf coffee blend
Overall the food was wonderful, and the best of all it was reasonable pricing. The website links for both places will be posted below!
